Rakang (Elandsgracht 29-31, Amsterdam) — A meal here is a delight to more than just the sense of taste. The dishes, many of them authentic regional specialties, come in generous portions and are seasoned with Thai spices, carefully blending fierce chili peppers with delicate flavors like ginger, coriander (cilantro), and Thai basil, to suit any palate, whether the preference is for fiery or mild. Bowls of lightly perfumed pandang rice, yellow curry, light-textured sauces, and pad Thai noodles are just some accompaniments. A variety of sorbets is on hand to draw the sting from the sharpest flavors. In the dining room’s fragrant cocoon, colorful silk fabrics drape along pastel-toned walls, and chairs are swathed in cool, soft cottons. Takeout service is available.
